Thai cooking

Oh how I wish I had a picture to share, of Sam shoveling it in and sweating. Toy would be proud, I think. Last night I made Sam a mixed seafood curry. It was hot! like hothot! Thai hot! also known as too hot for (white girl) me to eat. but he loves it that way. since it's just me and him at the house, I made him some extra hot Thai food.
First, I ground up Thai peppers and garlic and added that to my sizzling wok. then added the red curry paste and let it cook for a minute. Next, I added the seafood, tentacles and all, stirring to make sure eveything was well coated. Then comes the bamboo shoots and coconut milk. finish with some fish sauce and some fresh Thai basil. Sam was very pleased with my efforts. too bad zach wasn't there to enjoy it...

Next time, I'll take a picture! Thanks Toy for the lessons and the inspiration!

This weekend, Sam and I went camping on Pine Mountain for the 23st annual tacky lawn ornament and pink flamingo soiree. we had a great time. so good to get away. and take an awesome yellow lab with ya!

Union Bulldog soccer action. and ashley loves roscoe.

In their first scrimmage of the year, the Union Bulldogs lost to the EKU Colonels. Ashley had the only Bulldog goal to EKU's 3. The girls played a good game though. Ash played great, as usual. we're so proud of our girl!

on to roscoe...

Roscoe Moonieyan is a nice fella. (I don't know Roscoe's middle name. oh no!!!) He's a junior at Union, on tennis scholarship and studying business. Roscoe is from South Africa. He came to Hazard with Ash for a week or so when school first got out for the summer. She took him shooting and 4 wheeling and he loved it! He brought all the spices and the recipe his momma gave him, and I made some Indian curry that was as close to his mommas homecookin as possible. It was yummy. He is still in VT at camp and I know Ash is missing him really bad. Maybe almost as much as this momma is missing her!

Sarah Ann Pfister is a really sweet girl. Her family is from Winchester but she and Zach met at Pikeville College. She'll be in her Junior year at Pikeville when school starts back later this month. Sarah comes from a nice Christian family and encourages Zach to go to church, which makes this momma happy. I'm not sure she knows what to make of our wild bunch sometimes! But she just smiles and giggles. She has a really cute giggle. We really like Sarah alot. Oh and so does Zach.
Apparently, Sarah is a true Guitar Hero and kicks Zach's butt on a regular basis. Now if she could just get him to go to class and study!!!

Say hi to Eunice Delana Feltner. We call her Unicorn. She is Crystal's girlfriend and a real sweetheart. We all like her alot. She's silly and fun and giggly but also mature and responsible. She just graduated from high school, works at Goody's and is planning to attend EKU in the Fall (GO COLONELS!). She is very helpful to her mom, Monica, taking care the other kids and... she can cook! woo! Really though, she is a good girl.

ashley goes to college

Here's little Ashley in her new dorm room. It's a pretty nice setup really. There are 6 individual bedrooms with shared kitchen, living area, 2.5 baths and laundry room. She was pretty excited about her new UK sheets, bedspread and towel set. Her whole room is UK stuff. Well, she has a small Union banner and a Union bulldog stuffed animal. but other than that, it's UK all the way. She shares the room with 2 friends/teammates and 3 other girls who are on the tennis team, I think.

She was only home for 1.5 days between working at a summer sports camp in Vermont and then heading back to school for pre-season training. It's like 20 days of intense workouts before school even starts. Makes me sad that's all the Ashy I get for the summer...

Crystal went with us and was a big help carrying stuff. Her *special* college skills came in handy too- helping figure out how to rearrange Ashley's room and taping down Ash's TV cable with duct tape. Sam bought us a nice lunch at the Mexican restaurant in Bville. My veggie quesadilla was just super! and it was nice to have a little family time, even if it was without Zach...



The dorm/apartment that Ash is living in is pretty cool. Crystal was jealous of the room. I was jealous of the scenery. No, not the hot hard-bodied college boys, but the nice grassy area and the lake. I could just imagine all my friends from college here... Pants in the tree. B in his canoe in the lake with a fishing pole out. Red driving his truck to the edge of the water and wading in. Anytime we take one of the kids to school, I have dreams for days about college. what a great time in my life. I hope it is for them too.
